    Chicken and Leek

    I had a little craving a few days ago for chicken and leek soup with crusty bread.

    Thought there was something wrong with the recipe when it said 'preperation and cooking time - 20 mins'
    I mean, you have to wait longer than that in Magaluf.

    But it is correct. and it was excellent

    2 tablespoon oil in a big pan
    dice in a few chicken breasts
    dice in a medium onion
    dice in a few leeks
    dice in a few carrots
    dice in a bit of celery
    (i also stuck a spud in)
    salt and pepper (i stuck some chille flakes in)

    stir for ten minutes on a high heat

    pour in a couple of litres of chicken stock (i used 6 chicken oxos)

    simmer for ten minutes.


    should last you a few days
