I would not call "started" what you got ...
I think that too. There is a point at which you're deemed to have accepted the contract but I'd be surprised if 3 days reasonably counts. Especially if you haven't invoiced yet.

Verbal contract is also a contract, so he IS in the contract, it's just specific terms can be argued about if they are not set in writing.
