The old timers in my village always take at least two days to reply to emails

Not taking the mick, as an eighty or ninety year old using email at all shows a commendable ability to adopt new fangled technology, and I know several sixty and even fifty year old luddites who won't touch PCs.

All the same it's slightly bizarre, as if they don't want to give the Post Office any unfair speed advantage!

Most likely they only check their emails every couple of days, as they're probably not exactly snowed under with genuine emails. But then you'd expect occasional shorter waits, as when arriving at a station at random times to catch a train that turned up every two hours.

maybe they have to build up the courage to reply to you!
Always forgive your enemies; nothing annoys them so much.

or it takes them two days to painstakingly type the reply, although God knows they're rarely very long

If they lived through world war two, they probably have little time for alt right fake news spam.

          The old ways are best.

We didn't get a lot of junk messages when we used Morse Code. Never used to get messages by carrier pigeon from Nigeria offering a huge fee to help transfer £10m either.
