    Curry recipes?

    We recently cooked our first curry from scratch, after years of takeaway. It was a thai curry and quite nice, but I'd love to be able to make balti, madras, korma, passanda... favourite takeaway dishes really.

    I have no idea at all what goes in a curry to make the sauce, are there any good recipe books on "curry for idiots"? We have reasonable cooking skills between us (the wife & I), just no idea about curry.

                  a jar of ASDA chickpea and spinach sauce.
                  I guess that's the 'secret' filler, to make it look like curry?

                  I'm not into crazy-hot, Madras is my personal hotness limit. My local curry-house used to do a Jal Korma which was lovely... basically a hot Korma. Best of both worlds... creamy and sweet, but not so boring. Great as a breakfast curry
